Recipe of the dayt
chicken noodle soup:
- 2 tablespoons olive oil
- 1 onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
1. In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
2. Add the minced garlic and sauté for another minute until fragrant.
3. Pour in the chicken broth and bring it to a boil. Reduce the heat to low and let it simmer for about 10 minutes.
4. Add the cooked chicken, egg noodles, dried thyme, salt, and pepper to the pot. Stir everything together and let it simmer for an additional 8-10 minutes, or until the noodles are cooked through.
5. Taste and adjust the seasoning if needed.
6. Serve the chicken noodle soup hot, garnished with fresh parsley for an extra touch of flavor.
