Enjoy a warm stew- perfect for those busy school night that you can throw everything in a Instapot and make it ahead of time!
1 tin of lentils
1 tin of whole peeled tomatoes
2 bell pepper (capsicums)
a pinch of salt and pepper
Start by washing all your veggies. Chop them and cook in sunflower oil on medium heat for 5 minutes.
Add the tin of lentils and tomatoes with a splash of water.
Stir well and bring to boil.
Then reduce the heat to low and simmer for 30 minutes, or until stew has desired texture.
Season with salt and pepper before turning off the heat.
